Mouled NeBoolLee Shareef - The Prophet’s Birthday
Today, is a Muslim holiday. It is thier Prophet Mohammed’s birthday. They celebrate with burning incense, fireworks, firecrackers, and lighting candles. We had a special dinner of Sha-Shoo-Hah. My absolute favorite Algerian meal. It is made with a special fried flatbread, torn into small pieces and served with a meat and tomatoe sauce. It probably is one of the most difficult dishes to prepare. The flatbread takes a lot of time, patience, and skill. Here are some photos of the sha-shoo-hah.

you know as you are speaking about couscous and shakshoukha you make me wanna say emmmmmmmmmmmmmmmmmmm!!! I realy miss them my friend just as I MISS YOU ALL , you , my family and my friends ;;;;; you know I think that I won’t stay here in paris for a long time!!

I heard of Paula Wolfert by Chef Zadi.
I read once (don’t remember the link) that she gives lessons on how to “rouler le couscous” I mean not to cook it but make the grain with the “gassaa” “sayar” “refed” and all that traditional tools.
